I'm not a fry type guy but after puttin' some trout and flounder in the bote this past weekend we mixed it up a little with some fried fish.
1. Clean the fish, get em in some milk 10 minutes before cooking.
2. While they're soaking mix up some beer batter: 1 bottle of dark beer (Newkie), 1 cup of flour and seasoning (salt and pepper for me) and whisk into a frenzy.
3. Get the oil to 375, take the fish from the milk, dry it with a towel, dip it in the batter and drop it into the oil. wait a few minutes, flip til it's golden brown.
4. Take out the fish, dry it off with a towel and let sit.
5. Rinse repeat.
BTW this makes for a great vidalia onion ring batter.
The next recipe will be stupid complex for you striper guys...
